Besides water, prime quality italian eggs are added to the durum wheat flour obtained from the grinding of the best wheat, resulting in a rich, fragrant and fantastic mixture. The dough is flattened into a pasta sheet which shouldn't be too thin, wide and long strips are then cut out and rolled up into "nests". Exceptional with intense flavours such as mushrooms, truffles and meat sauces but also excellent served with simple melted butter and flavoured with sage.
