Our pasta ingredients are very simple: selected durum wheat, water, 2000 years of tradition and a strong passion!It is well known that pasta wasn't actually first invented in Italy, but this is the country which led it to the top levels of sophistication. Home made pasta has a strong traition throughout the whole Italy, and ours is made after the ancient Umbrian tradition which has a must: the use of a bronze wire-drawing machine in order to obtain the desired shape. Bronze is strictly used for drawing as it gives the pasta a roughness and porosity which eables it to absorb and blend well with the sauce. The last step for a pasta masterpiece is a dry desiccation, which gives this work of art the possibility to be stored for long periods....have a nice meal!
