RAIS TUNA FISH SAUCE

Rais is the Arabic name (note that Sicily was under the Ottoman Empire for centuries) given to the chief  tuna fisherman, the person in charge of the tuna slaughter in the Sicilian tuna fishing-nets. The main exponent of this historic background is tuna fish, which is expertly combined with the following exquisite delicacies: peeled tomatoes, dry tomatoes which intensify even further the taste of the fruit from the Sicilian land, Pantelleria capers, a wonderful gem in the heart of the Mediterranean, the Sicilian Nubia garlic, parsley, onions, black olives, pepper, all lightly sautéed in extra virgin olive oil.
